I’ve made this numerous times, most recently to go along with swai tacos. Something about the sweetness of the fish pairs well with the sweetness of mangos.
2 mangos, finely diced
2 green onions, chopped
1 jalapeño, deseeded & minced
2 Tbs fresh cilantro leaves, diced
juice of one lime
Pinch of salt
Combine all ingredients in a bowl, stir well, cover, and chill for at least a half hour before serving.
