I’ve decided that before I make any more citrus sorbets, I need to get a reamer. Squeezing lemons and limes by hand is a messy and annoying task. Luckily the results have been so worth it! Today I made a lime and almond extract sorbet that is very reminiscent of my favorite alcoholic beverage – an Amaretto Sour. I just needed a cherry to top it off with.
Amaretto Sour Sorbet
2 cups water
1 cup fresh squeezed lime juice
1 cup sugar
1 tsp almond extract
3 Tbs vodka (or substitute Amaretto)
Warm water just enough to dissolve sugar. Add lime juice, extract and vodka. Chill mixture until cold. Pour mixture into ice cream maker according to the machine’s instructions.
